As the chickpea plant originally grew in Persia and its surroundings, you may imagine that some excellent chickpea-based recipes come just from the Middle Eastern tradition: Humms over crispy bread. Accompany it with a glass of wine for the perfect last summer night dinner.

OUR MAIN INGREDIENT:
- buononaturale Boiled chickpeas
Chickpeas are among the staple foods of the balanced, healthy Mediterranean diet. Their origin traces back to the ancient days of Mesapotamia, yet their fortune has remained unchanged over the centuries. The Romans ate them fried, but the Napoleonic period treated them uniquely. It was customary, in fact, to carry chickpeas on board of ships where they were used as nails to plug small holes in the hulls.
Chickpeas belong to the Febaceae family, and their cultivation is widespread in the Italian regions of Liguria, Tuscany, Lazio, and Umbria. Traditionally appreciated for their high nutritional value and their absolute versatility, given that they contain all essential amino acids, chickpeas have other properties as well: high protein, fiber, vitamin, and mineral content and a low glycemic index. They are suitable for a multitude of recipes: soups, salads, ethnic dishes such as hummus, or simple side dishes.

OUR PROCEDURE:
- Drain the buononaturale Boiled chickpeas;
- Add a little oil, a pinch of salt, and a few drops of lemon juice;
- Emulsify together with tajine (that is, sesame seed paste). Do not despair if you do not have any, you can use sesame seeds instead after blending them with a third of seed oil;
- Adjust with a little cooking water of the chickpeas;
- Serve with paprika, a drizzle of olive oil, and chopped parsley.
