SUMMER TRUFFLE CARPACCIO
The buononaturale Summer truffle carpaccio is obtained from the black summer truffle variety. After its hunting and extraction (“caccia e cavatura”), which is a UNESCO world heritage practice, the buononaturale Truffle is dehydrated and transformed in semi-artisanal laboratories along the Central-Southern Apennines. Our truffle is preserved in extra virgin olive oil and without additives, thereby managing to retain its pungent arome and intense flavor. Combine it with a fillet or with any first course, from pasta or barley to rice, for memorable meals.
Ingredients: Black summer truffle (Tuber aestivum Vittadini) 55%, extra-virgin olive oil 44%, salt, aroma.
